- 2 cups cooked cold rice (day-old preferred)
- 1 cup cooked chicken diced or shredded
- 2 pcs eggs
- 1 cup frozen peas and carrots
- 2 tbsp soy sauce
- 2 tbsp oil vegetable or canola
- 2 cloves garlic minced
- Optional: green onions
Heat oil in a large pan over medium-high heat.
Add garlic and chicken; stir-fry for 2 minutes.
Push to one side, scramble eggs on the other.
