Ingredients
  

  • 1 sheet frozen puff pastry, thawed overnight in fridge
  • 6 oz Brie cheese (rind on or off), cut into small cubes
  • 1/2 cup cranberry sauce (homemade or whole-berry canned)
  • 1 tsp orange zest
  • 1 tsp fresh rosemary, finely chopped (plus more for garnish)
  • 1 tsp honey or maple syrup
  • 1 pcs egg, beaten (for egg wash)
  • Pinch of flaky sea salt (optional)

Instructions
 

  • Preheat & prepare.
    Heat oven to 400°F (200°C). Line a baking sheet or mini muffin tin with parchment paper.
  • Cut the pastry.
    Unfold puff pastry on a lightly floured surface. Slice into 2-inch squares. If using a mini muffin tin, gently press each square into a cup.
  • Mix the filling.
    In a small bowl, stir together cranberry sauce, orange zest, rosemary, and honey.
  • Assemble.
    Place a cube of Brie in the center of each pastry square. Spoon about ½ teaspoon of cranberry mixture on top.
  • Seal and shine.
    Fold corners slightly inward (or leave open for a rustic look). Brush edges with egg wash. Sprinkle with sea salt if using.
  • Bake.
    Bake for 13–15 minutes, until puffed and golden.
  • Cool & serve.
    Let cool for 5 minutes. Garnish with a small rosemary tip. Serve warm or at room temperature.
