- 1 can 15-ounce can black beans, drained and rinsed
- 1 can 15-ounce can black-eyed peas, drained and rinsed
- 1½ cups charred corn kernels from 3 ears fresh corn or frozen corn
- 1 cup cherry tomatoes halved

- 2 pcs Juice of 2 large limes about ¼ cup
- 1 tablespoon red wine vinegar
- 3 tablespoons extra-virgin olive oil

Char the Corn:
If using fresh corn, lightly brush the ears with olive oil and place them on a hot grill pan or cast-iron skillet. Cook for 8–10 minutes, turning occasionally, until the kernels develop dark charred spots. Allow to cool, then slice the kernels from the cob. (If using frozen corn, thaw completely and cook in a dry skillet over medium-high heat until lightly charred).
Dice the Fresh Vegetables:
Whisk the Dressing:
In a small bowl, whisk together the fresh lime juice, red wine vinegar, olive oil, cumin, salt, and black pepper until fully emulsified.
Combine the Base:
In a large mixing bowl, combine the black beans, black-eyed peas, charred corn, bell peppers, red onion, jalapeños, and cilantro. Pour the dressing over the mixture.
