Easy Cowboy Caviar Recipe (Texas Caviar Dip)

  • 1 Small bowl or liquid measuring cup (for dressing)
  • 1 Measuring cups and spoons
  • 1 Colander (for rinsing beans)
  • 1 Grill pan or cast-iron skillet

Ingredients
  

For the Cowboy Caviar:

  • 1 can 15-ounce can black beans, drained and rinsed
  • 1 can 15-ounce can black-eyed peas, drained and rinsed
  • cups charred corn kernels from 3 ears fresh corn or frozen corn
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper finely diced
  • 1 green bell pepper finely diced
  • ½ cup red onion finely diced
  • 2 jalapeños seeded and minced
  • ½ cup fresh cilantro chopped
  • cup crumbled Cotija cheese or feta cheese

For the Cumin-Lime Vinaigrette:

  • 2 pcs Juice of 2 large limes about ¼ cup
  • 1 tablespoon red wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions
 

Char the Corn:

  • If using fresh corn, lightly brush the ears with olive oil and place them on a hot grill pan or cast-iron skillet. Cook for 8–10 minutes, turning occasionally, until the kernels develop dark charred spots. Allow to cool, then slice the kernels from the cob. (If using frozen corn, thaw completely and cook in a dry skillet over medium-high heat until lightly charred).

Prepare the Beans:

  • Drain and rinse the black beans and black-eyed peas thoroughly under cold water to remove excess sodium and keep the dip from becoming cloudy.

Dice the Fresh Vegetables:

  • Finely dice the bell peppers, red onion, and jalapeños. Halve the cherry tomatoes and chop the cilantro. Keeping the vegetables a uniform size creates the perfect scoopable texture.

Whisk the Dressing:

  • In a small bowl, whisk together the fresh lime juice, red wine vinegar, olive oil, cumin, salt, and black pepper until fully emulsified.

Combine the Base:

  • In a large mixing bowl, combine the black beans, black-eyed peas, charred corn, bell peppers, red onion, jalapeños, and cilantro. Pour the dressing over the mixture.

Toss Gently:

  • Gently toss everything together until evenly coated. Chill for Flavor:

  • Cover the bowl and refrigerate for at least 30 minutes. This resting time allows the beans to absorb the tangy dressing.
