Instructions
Step 1: Brown the Halal Beef and Aromatics
Heat a large Dutch oven over medium-high heat (about 375°F). Add the halal ground beef and cook for 7–9 minutes, breaking it apart until browned.
Look for deep brown edges and caramelized bits forming on the bottom of the pot. Add diced onion and cook for 4–5 minutes until softened. Add garlic and cook for 30–45 seconds until fragrant.
Step 2: Toast the Spices and Tomato Paste
Reduce heat to medium. Add tomato paste, chili powder, cumin, smoked paprika, cocoa powder, salt, pepper, and cayenne pepper.
Stir continuously for 1–2 minutes until the tomato paste becomes a deep brick-red color and the spices smell rich and aromatic.
Step 3: Build the Chili Sauce
Pour in halal beef broth while scraping the bottom of the Dutch oven to release the browned flavor bits.
Add crushed tomatoes and kidney beans. Stir well until everything is combined.
Step 4: Simmer Until Rich and Thick
Bring the chili to a gentle boil over medium-high heat. Reduce heat to low (about 250–275°F), partially cover, and simmer for 45–60 minutes.
Stir occasionally until the sauce thickens, the beef becomes tender, and the flavors develop.
Step 5: Rest and Serve
Turn off heat and allow the chili to rest uncovered for 10–15 minutes.
