Ingredients
  

  • 3 medium potatoes diced
  • 4 eggs
  • 1 bell pepper chopped
  • 1 small onion chopped
  • 2 tbsp oil vegetable or olive
  • Salt, pepper, paprika (optional)

Instructions
 

  • Par-boil diced potatoes for 5–7 minutes until slightly tender. Drain and let dry.
  • Heat oil in a large skillet over medium-high heat.
  • Cook potatoes until golden and crispy (10–12 minutes).
  • Add onion and bell pepper; sauté until soft.
  • Make small wells and crack eggs into the skillet. Cover and cook until eggs set.
  • Season and serve hot.
