These easy air fryer chicken skewers are made with tender boneless chicken thighs, a creamy Greek yogurt, garlic, lemon, and herb marinade, then cooked until juicy inside with beautifully browned, lightly charred edges.   • 1 Large mixing bowl
  • 1 Whisk

Ingredients

  • lb boneless skinless chicken thighs, cut into 1½-inch pieces
  • ¾ cup whole-milk Greek yogurt
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 5 garlic cloves crushed
  • 1 tsp dried oregano
  • tsp smoked paprika
  • tsp ground cumin
  • tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tsp sumac
  • ½ tsp garlic powder
  • Fresh parsley or cilantro for garnish
  • Lemon wedges for serving

Instructions

  • Cut chicken into even 1½-inch pieces.
  • Whisk yogurt, oil, lemon juice and zest, garlic, oregano, paprika, cumin, salt, pepper, sumac, and garlic powder.
  • Coat chicken thoroughly and refrigerate for 30 minutes to 24 hours.
  • Thread chicken onto skewers, leaving small gaps between pieces.
  • Grill over medium-high heat at 400–450°F, turning once, until browned and the thickest piece reaches 165°F. For an air fryer, cook at 400°F for 10–12 minutes, flipping halfway.
  • Rest for 3–5 minutes, then garnish with herbs and serve with lemon.
