2½lbbonelessskinless chicken thighs, cut into 1½-inch pieces
¾cupwhole-milk Greek yogurt
2tbspextra-virgin olive oil
2tbspfresh lemon juice
1tsplemon zest
5garlic clovescrushed
1tspdried oregano
1½tspsmoked paprika
1½tspground cumin
1½tspkosher salt
½tspfreshly ground black pepper
1tspsumac
½tspgarlic powder

Instructions
Cut chicken into even 1½-inch pieces.
Whisk yogurt, oil, lemon juice and zest, garlic, oregano, paprika, cumin, salt, pepper, sumac, and garlic powder.
Coat chicken thoroughly and refrigerate for 30 minutes to 24 hours.
Thread chicken onto skewers, leaving small gaps between pieces.
Grill over medium-high heat at 400–450°F, turning once, until browned and the thickest piece reaches 165°F. For an air fryer, cook at 400°F for 10–12 minutes, flipping halfway.
Rest for 3–5 minutes, then garnish with herbs and serve with lemon.
